Clostridium pasteurianum as a source of single cell protein

Abstract
Protein production from Clostridium pas teurianum (ATCC 6013, Winogradsky) was maximized on sugar beet molasses and proved to be of good quality as compared to other microbial single cell protein sources. Protein from C. pasteurianum was evaluated by the following criteria: chemical score 47-50 (sulfur amino acids limiting), protein efficiency ratio 0.9 to 1.3, biological value 66.6~ 4.3 and digestibility 78.0~ 1.5. Physiological change occurred in some of the rats receiving the diets supplemented with this bacterium compared to control rats, as indicated by variations in organ morphology and cecum microflora. Low level agglutination titers against whole cells of C. pasteurianum were obtained from sera of some of the test rats. Further evaluation of protein from C. pasteurianum is recommended.
